    EBLEX highlights butchery training to French visitors

    Butchery training developed in the UK has been showcased to industry experts from France during a mission organised by EBLEX.

    Laurent Courte, from the National French Butchery School (ENSMV) in Paris and Louis Besnier, from the training committee of the Confédération Française de la Boucherie et de la CharcuterieTraditionnelle (CFBCT) were invited to visit the UK to look at some of the training currently in place for butchers and how EBLEX is supporting the industry. They were also joined by independent butcher Jean-Christophe Prosper, who has three shops in Paris.

    The visit, coordinated by EBLEX business development manager for trade marketing Dick van Leeuwen, included visits to catering and independent butchers. It came after the development of publications like the Meat Purchasing Guide and Cuts Development guide by EBLEX were translated into French to help share best practice in the industry on how to get the most out of Quality Standard beef and lamb.

    Dick said: “Showcasing Quality Standard beef and lamb to trade professionals and consumers alike is a key part of EBLEX’s work in France. As a direct result of the interest in the manuals EBLEX produces, we were asked to host our guests, and to give them an insight into how our development work is put into practice.

    “The visit proved to be a great success and our guests left with plenty of food for thought. They will be able to share new information with butchers across the Channel on meat purchasing and alternative cuts and how best to utilise the full carcase.”
